Jansz Brut Rose
The Jansz Premium NV Rosé is based upon Jansz wines of several vintages. Specially selected and crafted individual batches from cool climate locations in Tasmania, form this wine. Every site used to source grapes is specifically designated to growing fruit for sparkling wine. All batches are kept separate during winemaking to maximise blending options and the complexity of the final wines. The wine then goes through secondary fermentation in bottles and is aged on yeast lees for as long as possible with the average age of the final blend being 18 months to two years.

Always a solid wine from Anderson Valley, this NV is built of 60% Chardonnay and 40% Pinot Noir and offers pretty lemony and lemon oil notes atop a bed of fragrant white flowers. Very round and complete with an assertive mousse, just-baked bread, and bruised yellow apple fruit. This bubbly has excellent depth and a terrific mineral finish. Aged a minimum of two years on the yeast, clocking in at 10 g/L. 85,000 9-litre cases produced.

A close friend of his, Didier Dagueneau, the icon wine-maker in Pouilly-sur-Loire encouraged him down the path of producing ciders from apples and pears that are like no others. Ciders that make one draw comparisons to fine vintage wine. The core of Bordelet's estate is the 1.5 hectares of antique varietal apple and pear trees that are 40-50 years old. He plants only true varietal (non-hybrid, non-cross) trees, and the trees are balanced between sweet, bitter and sour varieties. Currently, he has 20 varieties of apples and 14 varieties of pears planted. The orchards are farmed organically and biodynamically, and Eric believes that this is the regimen that produces the best fruit for ciders. Bordelet's Poiré Authentique, which is done in a traditionally off-dry, sparkling style, works brilliantly with goat cheese!

Bisson's dry sparkler is finely balanced, with green apple and floral aromas dominating the complex, heady mix. If you enjoy Prosecco, this is essentially what this bottle is as it's made from the Prosecco grape, Glera. However, this is a bone dry rendition of the sparkling wine and very unique for that matter. Sealed with a crown cap and in 2016 this practice no longer allowed for the wine to be labeled as Prosecco all the while listing the grape Glera.

A hundred years after its founding in 1860 the Chiarli family debuted a new wine, appropriately named "Centenario." It used the Charmat method of effervescent winemaking that Chiarli had introduced to Lambrusco production area a few years earlier. Centenario—a new wine for a new age—showcased the slightly sweeter side of Lambrusco. The wine is amabile, literally "lovable," a designation for wines that are sweet but not so sweet they can only be served with dessert. It's produced with Lambrusco Grasparossa, a grape variety with deep color and high natural acidity that can counter the sugar content. The result is a well-balanced, intense red, soft, lightly effervescent wine that is indeed lovable.

Jacques Peters, the cellarmaster, and his team wanted a champagne that would be accessible and naturally engaging while conserving Veuve Clicquot's essential values in terms of style. The wine has a luminous color with attractive pink glints. The nose is generous and elegant, with initial aromas of fresh red fruit (raspberry, wild strawberry, cherry, blackberry), leading to biscuity notes of dried fruits and Viennese pastries (almonds, apricots and brioche). The fresh attack is followed by a fruity harmonious sensation on the palate. The wine is perfectly balanced in the best Veuve Clicquot style of pink champagnes, combining elegance and flair. The wine works its magic—this delectably full champagne can be enjoyed as a true delicacy. A deliciously fruity wine in earlybloom, this is a wonderful aperitif to be shared as a twosome or simply with friends. The Brut Souverain is the most historical cuvée in the region, as it was the first cuvée Apolline Henriot produced in 1808. Apolline aspired to put the light on her vineyards through the expression of a champagne. According to her, one year was not enough to tell the story of the terroirs, so she decided to put wines in reserve each year to incorporate them into a future blend. Therefore, she founded the House by creating a Champagne that would have blending as its fundamental principle. The House respects this philosophy today and uses every terroir in this multi-cru, multi-vintage cuvée. It was named Brut Souverain by Ernest Henriot, Apolline's grandson, when the House was appointed the official champagne supplier to the Courts of the King of Holland and of the Emperor of Austria-Hungary.
